Brown Butter Crab Risotto

Risotto sounds intimidating to most home cooks, but if you can stir, you can make it. It requires constant attention, adding liquid in portions and stirring until incorporated. But its richness and incredible texture are worth the effort. Serves 4

3 cups (750 mL) fish stock

3 tbsp (45 mL) unsalted butter

1 tbsp (15 mL) olive oil

2 shallots, finely chopped

2 small Thai red chilies, thinly sliced

¾ cup (175 mL) arborio rice

¼ cup (60 mL) white wine

½ cup (125 mL) grated Parmesan cheese, plus more for garnish

½ lb (225 g) crabmeat, picked through

¼ cup (60 mL) finely chopped chives, plus more for garnish

Grated zest of ½ lemon
